Gingerbread Boys

Gingerbread Boys

Ingredients

  • 4 tablespoons Earth Balance buttery sticks (½ stick)
  • ¼ cup brown, coconut or demerara sugar (55g)
  • ¼ cup molasses
  • ¼ c. water
  • 2 1/4 c. + 2 tablespoons (305g) whole wheat pastry flour or white whole wheat flour
  • 1 teaspoon allspice
  • ½ teaspoon cinnamon
  • ½ teaspoon ginger
  • ½ teaspoon cloves
  • ¼ teaspoon cardamom (optional but oh so good)
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder

Instructions

In a large mixing bowl cream together the Earth Balance and sugars.

Add molasses and mix.

Sift dry ingredients together.

Add the dry ingredients to the wet ones.

Slowly pour water into bowl as everything is coming together.

Scrape up from bottom and mix again.

Form dough into ball and cover bowl with saran wrap.

Place in refrigerator for ½ hour.

Roll out to 1/4".

Bake at 350 degrees for 15 minutes.
